Costa Rican Cabbage Slaw

Ingredients:
1 cup seeded and diced tomatoes
1/2 cup firmly packed minced fresh cilantro
1 cup finely chopped red bell pepper (optional)
1 small head green cabbage, finely shredded
1/2 cup freshly squeezed lime juice
1/2 teaspoon salt

Mix the tomatoes, cilantro and red pepper in a bowl.
Add the cabbage and toss.
Add the lime juice and salt at the last minute so the cabbage doesn't wilt.
Recipe makes 6 servings.
