Steak Diana

1 tbsp butter
2 sirloin steaks (about six ounces and 1/4 of an inch thick)
4 red onions, chopped
1/4 cup brandy
1/2 tsp mustard
1/2 cup beef broth
2 tbsp half-and-half
1 tbsp chives

Heat butter in a skillet over medium heat. Add the steaks to the pan. Sear each side of the steak until done. Remove the steaks from the pan, add the shallots, and cook until clear. Add remaining ingredients one at a time in the order listed, and cook to a slightly thick consistency. Pour the sauce over the steak and serve.
