Wild Blueberry Crisp
Filling
5 cups wild blueberries, fresh or frozen
1 cup (2 medium) diced peeled apples
1/4 cup sugar
1/2 teaspoon grated lemon rind
Crisp
1/2 cup light brown sugar
1/2 cup white flour
1/2 cup rolled oats
1/2 cup chopped pecans, optional
2 teaspoons cinnamon
1 teaspoon nutmeg
1/8 teaspoon salt, optional
3 tablespoons butter, slightly softened
Preheat the oven to 325-degrees. Butter an 8-inch square
baking dish.
Filling: In a small bowl, combine the wild blueberries,
apples, sugar, and lemon rind. Mix well and place in
the prepared baking dish.
Crisp: In a medium bowl, combine the brown sugar,
flour, oats, pecans, if using, cinnamon, nutmeg, and
salt, if using. Rub in the butter with your fingers until
the mixture resembles coarse crumbs. Spread evenly
over the filling. Bake 45 minutes or until the crust is
browned.
