Softened cream cheese and grated Parmesan make up this tender Herb Nut Cheese Log wrapped nicely in chopped toasted pecans.
1 package (8 oz) softened reduced fat cream cheese
1/3 cup grated Parmesan cheese
1/3 cup chopped toasted pecans
Mix one package (8 ounces) softened reduced fat cream cheese with one-third grated Parmesan cheese and chopped toasted pecans.
Shape into 8-inch log.
Roll in mixture of 1/4 cup each toasted chopped pecans and chopped fresh parsley; press gently into log to secure. Serve with crackers.
Slimming Suggestion: Use a variety of herbs and spices in place of salt as often as possible.
Makes 12 servings, 2 tablespoons cheese spread and 5 crackers each.
