Apple Crumb Cake Dessert

Apple

Ingredients:
One package (about 18-1/2 oz) yellow cake mix
1/4 cup butter or margarine
2 eggs
1 cup sour cream
1 can (21oz) apple pie filling
1/3 cup brown sugar
1 teaspoon ground cinnamon

Directions:
Preheat oven to 350-degrees. In mixing bowl, combine cake mix, butter, and one egg until crumbly; reserve 1/2-cup. Press remaining crumb mixture into 8-inch square pan. Blend the remaining egg with sour cream; spoon over crumb mixture.

Stir apple pie filling with brown sugar and cinnamon; spoon over sour cream mixture. Sprinkle with reserved 1/2-cup crumb mixture.

Bake for 40 minutes or until the filling is bubbly and the topping is light brown in color. Cool before serving.

Bonus Recipe: German Apple Crumb Cake

Ingredients:
1/4 cup margarine, softened
2/3 cups sugar spoonable substitute or 16 packets sweetener
2 tablespoons strawberry spreadable fruit
1 egg, beaten
1 teaspoon vanilla
1/4 cup skim milk
1 cup self rising flour
1 medium Granny Smith apple
2 teaspoons lemon juice
1/2 teaspoon cinnamon
1 packet sweetener or 2 teaspoons spoonable substitute

Directions:
Beat margarine, sugar substitute, and spreadable fruit together until combined and creamy.

Mix together the egg, vanilla and milk. Add to the margarine mixture alternately with the self-rising flour. (The mixture will be thick.) Spoon mixture into a greased and parchment lined 8-inch round cake pan.

Peel and core apple; cut into slices. Dip slices into lemon juice. Place decoratively on top of cake mixture.

Bake in preheated 350 degree oven for 30 minutes, or until toothpick comes out clean. Turn out onto a towel; peel off parchment. Invert onto a wire rack with apple on top. Sprinkle with cinnamon and additional sweetener while cake is still warm.

Recipe makes ten servings.
