Apple Pie Quesadilla
Ingredients:
1 tablespoon butter
2 large (10-inch) flour tortillas
1 can (21 ounces) apple-pie filling (see note)
1 /2 cup finely shredded cheddar cheese
Melted butter
1 tablespoon sugar
1 /2 teaspoon ground cinnamon
Directions:
Preheat oven to 375-degrees.
Place butter in small microwave-safe dish covered with paper towel and microwave at high until melted, about 30 seconds. Set aside.
Spray large baking sheet with cooking oil spray. Place one tortilla on baking sheet. Pour apple pie filling onto tortilla and spread it almost to edge of tortilla. Sprinkle cheese evenly over apple-pie filling. Place second tortilla over apple mixture, forming top crust.
Using spoon spread melted butter evenly over top crust of quesadilla. Mix sugar and cinnamon together in small dish and sprinkle evenly over melted butter.
Bake until quesadilla is crisp and edges just begin to brown, eight to ten minutes. Remove from oven. Using pizza cutter or sharp knife cut quesadilla into four wedges. Serve at once.
