Apple Harvest Blondies
Ingredients:
3 ounces cream cheese
2/3 cup butter
2-1/4 cup packed brown sugar (divided)
3 eggs
2 cups flour
1 teaspoon baking powder
1 teaspoon salt
1 teaspoon vanilla extract
Two medium to large apples, peeled, cored and chopped
2 ounces chopped pecans
1 teaspoon ground cinnamon
Directions:
Place cream cheese in freezer one hour. Preheat oven to 350-degrees.
Melt butter in a large saucepan. Remove from heat and thoroughly stir in two cups brown sugar.
Add eggs, flour, and baking powder, salt and vanilla and stir until well blended. Fold in chopped apples and place mixture in ungreased 13-by-9-inch baking pan.
Chop cream cheese into small pieces (this is much easier when the cheese is frozen) and mix with remaining 1/4 cup brown sugar, pecans and cinnamon. Sprinkle mixture on batter and bake 35 minutes. Serve warm or at room temperature. Refrigerate leftovers.
Recipe makes 16 to 20 servings.
