Apple log made of cream cheese with apples, pecans and cinnamon. Serve with vanilla wafers, cookies or crackers. Reduced-fat cream cheese works very well in this recipe. Fat free would be a matter of choice, but it doesn't have quite the creaminess.
1 8-ounce package cream cheese
1/2 cup finely chopped tart apple
1/8 cup finely chopped pecans
1/4 teaspoon ground cinnamon
Additional chopped pecans, toasted
Sugar cookies, assorted crackers or Vanilla wafers
In a bowl, combine the cream cheese, apple, pecans and cinnamon. Shape into a log; roll in toasted pecans. Cover and refrigerate.
Remove from the refrigerator 20 minutes before serving. Serve with vanilla wafers, cookies or crackers.
Recipe makes 1 log.
Extra: Apple and Brie Fondue
In need of something a bit on the "fancy" side for company? Consider this Fondue!
2 pounds brie cheese
5 apples, peeled and cut into slices
Remove rind from cheese and cut into cubes. Place cheese in fondue dish. Heat until cheese has melted but not liguidy. Serve apple slices to dip into cheese. You can use teared pieces of italian bread also.
