Apple Pie Apples a la Mode Recipe

Apple

This easy-to-make dessert tastes just like a juicy apple pie without the fattening high-calorie crust.

Ingredients:
2 teaspoons butter or vegetable oil
4 large baking apples (such as Rome Beauty or Cortland), peeled, cored and sliced 1/3 inch thick
1 cup apple cider or unsweetened apple juice
1/2 cup golden raisins
1 tablespoon dark brown sugar
2 teaspoons fresh lemon juice
1/4 teaspoon vanilla extract
1/8 teaspoon ground cinnamon
Frozen low-fat vanilla yogurt for serving

Directions:
Heat the butter or oil in a large nonstick skillet over medium-high heat until the butter is melted. Using a wooden spoon, gently stir in the apple slices, apple cider, golden raisins, brown sugar, lemon juice, vanilla and cinnamon.

Cook the apple mixture, gently stirring occasionally, until the apples are golden and soft but not mushy, about 12 minutes.

Let the apple mixture cool slightly before spooning into individual dessert bowls. Serve warm, at room temperature or chilled with scoops of frozen yogurt on top. Serves 4
