Apple-Cinnamon Snack Cake
This makes a delicious and healthful cake. This cake is just moist and amazing. We asked all our guests to guess what the cake was made of -- no one could. They loved it. We got many compliments and kids asked for second pieces. This is one of the healthiest cakes out there. Not to mention that it could not be simpler to prepare. Don't let those white beans scare you away - try it!
Ingredients:
15-ounce can white beans, pureed
Two eggs, beaten
1/4 cup water
One medium apple, peeled and chopped
1 cup sugar
1 cup whole-wheat flour
1/2 teaspoon baking powder
1 teaspoon cinnamon
1/2 teaspoon nutmeg
Directions:
Preheat oven to 350-degrees and spray 8-by-8-inch baking pan with vegetable oil spray.
Combine first five ingredients, mixing well. Combine flour, baking powder and spices with wet ingredients and mix well. (If batter is too thick, add a little more water).
Pour batter into sprayed pan and bake for about 40 minutes at 350-degrees.
Recipe makes 12 servings.
