This healthy apple cinnamon snack cake is a bit unusual in its ingredients, but makes a delicious and healthful cake. The cake is moist and amazing; one of the healthiest cakes out there. Not to mention that it could not be simpler to prepare. Don't let those white beans scare you away - try it! Cinnamon and nutmeg spices lend sweet, spicy flavor.
15-ounce can white beans, pureed
2 eggs, beaten
1/4 cup water
1 medium apple, peeled and chopped
1 cup sugar
1 cup whole wheat flour
1/2 teaspoon baking powder
1 teaspoon cinnamon
1/2 teaspoon nutmeg
Preheat oven to 350-degrees and spray 8-by-8-inch baking pan with vegetable oil spray. Combine first five ingredients, mixing well. Combine flour, baking powder and spices with wet ingredients and mix well. (If batter is too thick, add a little more water).
Pour batter into sprayed pan and bake for about 40 minutes at 350-degrees.
