Glazed Cinnamon Nut Baked Apples are a spicy and heart warming treat to whip up any time of the year.
Cinnamon, as most of us are well aware, is a perfect compliment to apples; plus, cinnamon is now hailed for its power to improve insulin sensitivity and reduce blood glucose levels. It's also been shown to lower cholesterol and triglyceride blood levels.. The majority of fat in walnuts are the "healthy" polyunsaturated fat, so very little harm and a lot of good come from their addition. Walnuts also add protein and dietary fiber. Even the maple syrup has some nutrients to lend!
1/4 cup packed light brown sugar
1 tablespoon chopped walnuts
1/2 teaspoon cinnamon (see note)
4 large baking apples
1 tablespoon butter
2 tablespoons maple syrup
Preheat the oven to 375-degrees.
Place 1/4-cup water in an 8-inch square-baking dish.
In a small bowl, mix the brown sugar, walnuts and cinnamon.
Core and peel the apples, but do not cut through the bottoms.
Place the apples in the baking dish and fill each with the brown-sugar mixture; dot with the margarine, then drizzle with the syrup.
Bake, basting the apples wit h the pan juices, about 40 minutes. With a slotted spoon, transfer to dessert plates; cut in half.
Garnish with cinnamon sticks, if desired.
