Serve this hearty Mediterranean microwave meat loaf with frozen stuffed potatoes and a nutritious tossed green salad.
1 generous pound lean ground beef
1/2 cup dry bread crumbs
1/4 cup grated Parmesan cheese
1 large egg
1/3 cup plus 2 tablespoons prepared pasta sauce, divided
2 tablespoons lemon juice, divided
1/2 teaspoon ground allspice
1/2 teaspoon Italian seasoning
1/4 teaspoon black pepper
In a large bowl, combine ground beef, sausage (if in links, remove casing), bread crumbs, cheese, egg, 1/3-cup pasta sauce, 1 tablespoon lemon juice, allspice and pepper. Mix until blended. Pat into a ball. Place in 9-inch glass pie plate or shallow microwave-safe casserole 9 to 10-inches in diameter. Press into 7-inch circle.
Microwave, uncovered, on high, eight minutes. Pour off drippings. Meanwhile, combine remaining 2-tablespoons pasta sauce and 1 tablespoon lemon juice; spread over top of meat loaf. Microwave three to five minutes more or until meat loaf registers 150-degrees in center. Let stand five minutes before serving.
Serving Suggestion: Serve with frozen stuffed potatoes heated according to package directions and tossed green salad.
