Bacon, mushrooms, onions, basil and chives are spread over steaks then rolled into a pinwheel shape for Grilled Steak Pinwheels.
2 flank steaks (1 pound each) trimmed
1/4 pound sliced turkey bacon, cooked and crumbled
1 cup finely chopped fresh mushrooms
1 cup finely chopped green onion
1/4 cup finely chopped fresh basil or four teaspoons dried basil
2 tablespoons minced fresh chives
Pound flank steaks on each side.
Combine bacon, mushrooms, onions, basil and chives; spread evenly over steaks.
Roll up the meat and secure with skewers or wooden picks. Cut each roll into 1/2 - 3/4-inch slices and secure with a wooden pick or skewer.
Grill over hot coals for four to six minutes per side or until meat reaches desired doneness. Remove picks before serving.
Recipe makes 8 servings.
