Quick Beef Casserole
Healthy Beef Recipe
Ingredients:
1/2 pound lean ground beef
1 cup onion, chopped
1 cup celery, chopped
1 cup green bell pepper, cubed
3-1/2 cups tomatoes, diced
1/4 teaspoon salt
1/2 teaspoon black pepper
1/4 teaspoon paprika
1 cup frozen peas
2 small carrots, diced
1 cup uncooked rice
1-1/2 cup water
Directions:
In skillet, brown ground beef
and drain off fat.
Add rest of ingredients. Mix well. Cover and cook over medium heat until boiling. Reduce to low heat and simmer for 35 minutes. Serve hot.
Yield: 8 servings. Serving size: 1-1/3 cup.
