Cappuccino Rum Shake with softened coffee ice cream, dark rum, ground cinnamon, whipped cream and a garnish of cocoa powder and cinnamon sticks.
2 cups softened coffee ice cream
6 tablespoons dark rum, or to taste
1/4 teaspoon ground cinnamon
1/2 cup Lite whipped cream
Garnish: unsweetened cocoa powder and 4 inch cinnamon sticks
In a blender, blend ice cream, rum and ground cinnamon until smooth but still thick.
Pour into two chilled stemmed glasses.
Top drinks with whipped cream and garnish with cocoa powder and cinnamon sticks, if desired.
Recipe makes 2 servings.
There are two types of cocoa powder available in supermarkets today: alkalized and non-alkalized, or natural. The latter is lighter in color and bolder in flavor, but both types have their roles in cooking and baking -- one is not better than the other. Use the type of cocoa powder specified in the recipe; if none is specified, it's okay to use either.
