Delicious pineapple and coconut flavoring pair up in this creamy, cool, refreshing tropical cool down beverage.
Pineapples contain little or no fat or cholesterol, and provide significant amounts of fiber, digestive enzymes, vitamin C, calcium, and potassium.
1 cup fat free or low fat milk
1/2 cup juice-packed pineapple bits
3 ounces plain vanilla yogurt
1/8 teaspoon coconut extract
Combine all ingredients in blender, and blend until very smooth.

3 cups buttermilk
1 can (8 ounces) crushed pineapple with juice, chilled
1/4 cup sugar
1 teaspoon vanilla extract
5 ice cubes
Fresh mint sprigs, optional
In a blender container, combine buttermilk, pineapple, sugar and vanilla. Cover and blend for 30 seconds or until combined. With blender running, add ice cubes, one at a time, through opening in lid. Blend until mixture is frothy and nearly smooth. Pour into chilled glasses. If desired, garnish with a sprig of mint. Recipe serves six.
