A basic fruit bread to which you can add any fruits, vegetables, walnuts and spices that you desire.
3 cups all-purpose flour
2 teaspoons baking powder
1 teaspoon baking soda
1/2 teaspoon salt
1 cup white sugar
1/2 cup vegetable oil
1/2 cup liquid egg substitute OR 2 eggs
1 cup shredded apples
3/4 cup chopped walnuts
1/2 teaspoon vanilla extract
Preheat oven to 350 degrees. Grease one 4-1/2 x 8-1/2 inch loaf pan.
Mix flour, baking powder, soda, salt, sugar, oil, eggs, fruit or vegetables, walnuts, spices, and vanilla only until dry ingredients are moistened.
Bake in greased 4 1/2 x 8 1/2 inch loaf pan at 350 degrees for 35 to 40 minutes.
Recipe makes 1 8-1/2 x 4-1/2 inch loaf.
If you just stick to the main recipe, consider adding 1/2-teaspoon of ground cinnamon. It is fresh, wholesome and brimming with sweet cinnamon flavor that goes so well with apples.
