Healthy Bread Recipe

Ingredients:
1-1/2 cups unbleached flour
2/3 cup firmly packed brown sugar
2-1/2 teaspoon baking powder
1/4 teaspoon salt
2 egg whites
1 cup nonfat milk
1/4 cup honey
2 tablespoons butter or margarine, melted
1 cup bran flakes
2/3 cup finely chopped dried apricots

Directions:
Preheat oven to 350 degrees. Coat an 8-by-4-inch loaf pan with nonstick spray. In a medium bowl, combine flour, brown sugar, baking powder and salt; set aside.

In another medium bowl, combine egg whites, milk, honey and melted butter or margarine. Add liquid ingredients to dry ingredients and stir until just combined. Stir in bran flakes and apricots.

Pour batter into prepared pan. Bake for 50 minutes, or until a toothpick inserted in center comes out clean. Remove from pan and cool on wire rack.

Recipe makes 16 slices.

Each slice contains approximately: 128 calories, 2 grams fat, 4 milligrams cholesterol, 137 milligrams sodium, 27 grams carbohydrates, 3 grams protein and 1 gram fiber.
