Quick Peanut Butter Raisin Bread Recipe
Healthy Bread Recipe
Ingredients:
3/4 cup peanut butter
1/2 cup brown sugar (light or dark)
1/4 cup molasses
2 eggs
1 cup raw carrots sliced (or can use one cup applesauce)
1/2 cup water
1/2 cup raisins
1 cup flour
1 cup whole wheat flour
1 teaspoon baking soda
1/2 teaspoon salt
1/2 teaspoon cinnamon OR 1/2 teaspoon pumpkin pie spice
Directions:
Cream the peanut butter, brown sugar, molasses and eggs in a large bowl until mixture is creamy.
Place carrots and water in a blender or food processor and blend until mixture resembles baby food. Alternatively, you can use applesauce in place of the carrots and water. In either case, measure after the blending or from the can so you have one cup of the soft mixture be it the carrots or applesauce.
Mix the carrot mixture or applesauce in with the peanut butter mixture.
Sift together the flour, baking soda, salt and cinnamon. Add the flour mixture to the main bowl of ingredients. Mix until blended but do not over-mix; the bread will get tough.
Grease a bread loaf pan (9 x 5 inches with 3 inch high sides) and pour in bread mixture. Shake pan lightly to get the loaf even.
Bake at 325 degree oven for 55 to 60 minutes or until done. Check for doneness with a toothpick. The toothpick should come out clean when the bread is done.
