Heart-Healthy Flaxseed Bread

Heart-Healthy Flaxseed Bread with honey, olive oil, flaxseed and whole wheat flour...can't get more healthful than that!

Ingredients

1 1/4-ounce package active dry yeast
2 tablespoons plus 1-1/4 cup warm water (110 to 115 degrees)
3 tablespoons honey
1 tablespoon olive oil
1/2 teaspoon salt
1 cup ground flaxseed
1-1/4 cup whole wheat flour
1-3/4 cup bread flour

Directions

In large mixing bowl, dissolve yeast in 2 tablespoons of warm water. Set this aside until bubbly, about five minutes.

Mix in honey, oil, salt and the remaining 1-1/4 cups warm water. Add ground flax, whole-wheat flour and 1 cup of bread flour. Mix well.

Stir in enough of remaining bread flour to make soft dough. Turn dough out onto lightly floured surface. Knead for ten minutes, or until smooth and elastic. Shape into a loaf and place in a 9-by-5-inch loaf pan that has been coated with non-stick cooking spray. Cover and let rise in a warm place until doubled in bulk, about 1 hour.

Bake in 350-degree oven for 40 to 50 minutes or until loaf is browned and sounds hollow when tapped.

Remove from pan and cool on a wire rack.

Nutrition Information

Recipe makes 1 9-inch loaf or 12 to 16 slices.
