Breakfast Quick Bread Recipe

This is a very pretty loaf with a light background. It's filled with the sweetness of glazed fruit.

Ingredients
2 cups all-purpose flour
3/4 cup white sugar
3-1/2 teaspoons baking powder
3/4 teaspoon salt
1/4 cup candied pineapple, diced
1/2 cup currants
1/2 cup chopped candied cherries
2 eggs
1 cup milk
1/4 cup vegetable oil

Directions

Preheat oven to 350 degrees. Grease one 9 x 5 x 3 inch loaf pan.

In large bowl measure in flour, sugar, baking powder, salt, candied pineapple, raisins or currants, and cherries. Stir thoroughly. Make a well in center.

In small bowl beat eggs until frothy. Mix in milk and oil. Pour into well. Stir just to moisten. Pour into greased 9 x 5 x 3 inch loaf pan.

Bake at 350 degrees for 1 hour. Let cool in pan 10 minutes, then remove.

Recipe makes one 9 x 5-inch loaf.
