Breakfast Quick Bread Recipe

Simple to make and very yummy! A very fruity and tasty recipe!

Ingredients
1 cup margarine or butter, softened
2 cups white sugar
4 eggs
1 cup mashed banana
1 (15 ounce) can crushed pineapple with juice
4 cups all-purpose flour
1 teaspoon baking soda
2 teaspoons baking powder
3/4 teaspoon salt
1/2 cup flaked coconut
1/2 cup chopped walnuts

Directions

Preheat oven to 350 degrees. Lightly grease a 9 x 5 inch loaf pan.

In a large bowl, cream margarine and sugar together until light and fluffy. Mix in eggs, bananas and pineapple.

In a separate bowl, sift together flour, baking soda, baking powder and salt. Stir flour mixture into egg mixture. Fold in coconut and walnuts. Pour batter into prepared loaf pans.

Bake in preheated oven for 60 minutes, or until a toothpick inserted into center of the loaf comes out clean.

Recipe makes two 8 x 4-inch loaves.

Hawaiian Nut Bread

Very easy and best of all, very good!

Ingredients:
3 cups all-purpose flour
3/4 teaspoon salt
1 teaspoon baking soda
2 cups white sugar
1 teaspoon ground cinnamon
1 cup chopped walnuts
3 eggs, beaten
1 cup vegetable oil
2 cups mashed very ripe banana
1 (8 ounce) can crushed pineapple, drained
2 teaspoons vanilla extract
1 cup flaked coconut
1 cup maraschino cherries, diced

Directions:
Preheat oven to 350 degrees. Grease two 9 x 5 inch loaf pans.

In a large mixing bowl, combine the flour, salt, baking soda, sugar and cinnamon. Add the walnuts, eggs, oil, banana, pineapple, vanilla, coconut and cherries; stir just until blended. Pour batter evenly into the prepared pans.

Bake at 350 degrees for 60 minutes, or until a tooth pick inserted into the center of a loaf comes out clean. Cool in the pan for 10 minutes, then remove to a wire rack to cool completely.

Recipe makes two 9 x 5-inch loaves.
