Breakfast Quick Bread Recipe
Preheat oven to 350 degrees. Grease and flour two 8 x 4 inch loaf pans.
In a large bowl, beat the eggs lightly. Blend in the sugar, oil, and vanilla. Add flour, baking powder, baking soda, salt, and cinnamon; mix just to combine. Stir in the peaches and nuts. Pour batter into prepared pans.
Bake for about 1 hour, or until a tester inserted in the center comes out clean.
A quick bread that's easy and tasty.
Ingredients:
1 (29 ounce) can sliced peaches with juice
6 tablespoons sugar
2 cups all-purpose flour
1 teaspoon baking powder
1 teaspoon baking soda
1/4 teaspoon salt
1 teaspoon ground cinnamon
1 1/2 cups sugar
1/2 cup butter flavored shortening
2 eggs
1 teaspoon vanilla extract
1 cup chopped pecans
Preheat oven to 325 degrees. Grease and flour two 9x5 inch loaf pans.
Place peaches, peach juice and 6 tablespoons sugar in a blender; puree until smooth. In a large bowl, sift together flour, baking powder, baking soda, salt and cinnamon. In a large bowl, cream together the shortening and 1 1/2 cups sugar. Stir in the eggs one at a time, beating well with each addition, then stir in the vanilla. Blend this mixture into the flour mixture, alternately with the peach puree; stir just to combine. Fold in the nuts. Pour batter into prepared pans.
Bake at 325 degrees for 55 to 60 minutes, or until a toothpick inserted into the center of a loaf comes out clean. Cool 10 minutes in pans; turn out on rack and let cool completely.
Recipe makes two, 9 x 5-inch loaves.
