Two Slices Dizzy Pineapple Quick Bread

Dizzy Pineapple Quick Bread tastes great with only 4 simple ingredients. The addition of beer gives it a delightful yeasty taste. Walnuts add a nice crunch and flavor, but can be left out if you're a non-nut person.

Ingredients

2 eggs
1/2 cup melted butter
1 cup white sugar
1 cup crushed pineapple with juice
1 teaspoon vanilla extract
2-1/2 cups all-purpose flour
3 teaspoons baking powder
1/2 teaspoon baking soda
3/4 teaspoon salt
1/2 cup chopped walnuts

Directions

Preheat oven to 350 degrees. Grease one 9 x 5 inch baking pan.

Beat eggs slightly. Add butter and sugar. Beat smooth. Stir in pineapple and vanilla. In separate bowl put flour, baking powder, soda, salt, and walnuts. Stir well and pour into pineapple mixture. Stir to moisten. Pour into greased 9 x 5 x 3 inch loaf pan.

Bake in 350 degree oven for 1 hour. Test with toothpick. Let stand 10 minutes. Remove from pan. Cool and wrap.

Dizzy Pineapple Quick Bread

This pineapple bread tastes great with its tropical zing - the beer gives it a delightful yeasty taste.

Ingredients
1 (8 ounce) can pineapple chunks
2-3/4 cups self-rising flour
1/3 cup white sugar
1 (12 fluid ounce) can or bottle beer

Preheat oven to 350 degrees. Grease one 9 x 5 inch baking pan.

Combine the pineapple flour, sugar and beer. Do not overmix! Pour batter into the prepared pan. Bake at 350 degrees for about 1 hour or until bread tests done. Recipe makes one 9 x 5-inch loaf.
