Rapid Mix One Bowl Salt-Free Bread

Ingredients

1 cup warm water
1 envelope active dry yeast
2-3/4 to 3-1/4 cups all-purpose flour
1 tablespoon sugar
2 tablespoons peanut oil

Directions

In large warm bowl, place warm water and sprinkle in yeast. Stir until dissolved. Add 1 cup flour, sugar and oil. Beat two minutes at medium speed of electric mixer, scraping bowl occasionally. Add enough remaining flour to make a soft dough. Knead on lightly floured surface until smooth and elastic, about eight to ten minutes. Place in greased bowl, turning to grease top. Cover; let rise in warm, draft-free place until doubled in bulk, about 45 minutes.

Punch dough down; roll to 12 x 7-inch rectangle. Beginning on short end, roll up tightly as for jelly roll. Pinch seam and ends to seal. Place, seam side down, in greased 9 x 5-inch loaf pan. Cover; let rise in warm, draft-free place until doubled in size, about 45 minutes.

Bake at 400-degrees for 30 minutes or until done. Remove from pan; cool on wire rack.
