Zucchini Maple Quick Bread is a moist zucchini bread complemented with the flavoring of maple extract. Added nutrients come from the addition of wheat germ. Plenty of walnuts throughout add nutrients along with a nice crunch.
1 cup vegetable oil
1 cup packed brown sugar
1 cup white sugar
3 teaspoons maple flavored extract
2-1/2 cups all-purpose flour
1/2 cup wheat germ >
2 teaspoons baking soda
2 teaspoons salt
1/2 teaspoon baking powder
2 cups grated zucchini
1 cup chopped walnuts
Preheat oven to 350 degrees. Lightly grease a 9x5 inch loaf pan.
Mix all ingredients in order given.
Bake at 325 degrees for 1 hour. Cool.
Recipe makes two 9 x 5 inch loaves.
