Healthy Breakfast Recipe

Cover toast with this spread and wrap it in a napkin: A tasty, one-handed, energy-packed breakfast on the fly. And beware of imitation pumpernickel! Not all store-bought pumpernickels have the same benefits as the time-tested traditional German variation. Many get their dark color from molasses, not from whole rye kernels and a special baking process that takes many hours. These types usually contain more wheat flour than rye, and some are made using yeast instead of sourdough starter. Traditional pumpernickel is made with coarsely ground rye flour (and perhaps some wheat flour) and is fermented with sourdough starter.

Ingredients:
4 oz light cream cheese
1/2 cup dried dates, chopped
1/2 teaspoon ground cinnamon
8 slices pumpernickel bread, toasted

Directions:
Process cream cheese, dates and cinnamon in food processor until dates are very finely chopped.

Spread about 2-1/2 tablespoons between 2 slices toast.

Repeat and serve.
