Pumpernickel bread for Brown Bread 'n Spread

For an added kick in these Breakfast Quesadillas, substitute one of the flavored shredded cheeses available in your supermarket's dairy aisle for the Monterey Jack.

Ingredients

4 ounces light cream cheese
1/2 cup dried chopped >dates
1/2 teaspoon ground cinnamon
8 slices toasted pumpernickel bread

Directions

Process cream cheese, dates and cinnamon in food processor until dates are very finely chopped.

Spread about 2-1/2 tablespoons between 2 slices toast.

Repeat and serve.

Notes on store bought pumpernickel

Not all store-bought pumpernickels have the same benefits as the time-tested traditional German variation. Many get their dark color from molasses, not from whole rye kernels and a special baking process that takes many hours. These types usually contain more wheat flour than rye, and some are made using yeast instead of sourdough starter. Traditional pumpernickel is made with coarsely ground rye flour (and perhaps some wheat flour) and is fermented with sourdough starter.
