Golden and fluffy, these mildly Egg Free Spiced Pancakes are ideal with syrup, jam or your favorite berries. You will never guess the eggs are missing.
In a large bowl, combine flour, brown sugar, baking powder, pie spice and salt. In another bowl, combine milk and oil; stir into dry ingredients just until moistened. Pour batter by 1/4 cupfuls onto a hot griddle coated with cooking spray; turn when bubbles form on top.
Cook until the second side is golden brown. Serve with syrup if desired.
Recipe makes 8 pancakes.
