A sweet and tasty cake with raisins and spiced with nutmeg, cloves and cinnamon. Contains NO dairy - NO butter, eggs or milk!
In a saucepan, place the following ingredients:
1 cup light brown sugar
1 cup water
1 cup seeded raisins
1/3 cup shortening
1/4 teaspoon ground nutmeg
1/2 teaspoon ground cloves
1 teaspoon ground cinnamon
1 teaspoon baking soda
1/2 teaspoon baking powder
2 cups all purpose flour
Boil the first seven ingredients (brown sugar, water, raisins, shortening, nutmeg, cloves and cinnamon) together in a saucepan for three minutes and let cool.
When cool, add 1 teaspoonful baking soda dissolved in a little hot water, and 1/2 teaspoon baking powder sifted in two cups of flour.
Bake in two 8 or 9-inch layers in a moderate oven (350 degrees) for 30 to 40 minutes, depending on size of your cake pan.
- Delicious if steamed instand of baked and served as pudding.
- Maple icing is fantastic as a topping on this cake.
Recipe makes 8 servings.
