Fat Free Cake Recipe

Ingredients:
3 heaping tablespoons of rice flour
1 tablespoon of skim soy milk
Water -- enough to make a soft dough in a bowl
Artificial sweetener or sugar or honey dribbled on top
1 heaping tablespoon of yogurt

Directions:
Mixed rice flour, milk, water to a soft dough and microwave for one minute.

Top with cold yogurt and honey or sweetener sprinkled on top.

Eat Sweet Rice Cake immediately!

Note: Traditional Rice Cakes are usually made from brown rice, which is sometimes mixed with wild rice, corn, or sesame seed. These snacks are mild and do not have a strong, intense taste. They are popular because they can be part of a reduced calorie and gluten free diet.

Bonus Recipe: Mini Rice Cake Tartlets

Ingredients:
Mini Rice Cakes
1/2 cup pineapple yogurt spread
Assorted fruit, cut-up into small pieces Suggested fruits: Mandarin orange segments, blueberries, pineapple tidbits, strawberries, bananas, kiwifruit

Directions:
Spread teaspoonful of yogurt spread on each rice cake; top with fruit. Serve immediately. Recipe makes 24 Mini Rice Cake Tartlets. Serving Size: 1 fruit tartlet. Only 20 calories per tartlet.
