Fat Free Frosting Recipe
The nutritional value of the grapefruit varies with the color (white, pink, or red). Pink grapefruits have a higher amount of vitamin A. Half a grapefruit provides more than 50 percent of the adult Recommended Dietary Allowance (RDA) of vitamin C; it also has 325mg of potassium, 25mcg (micrograms) of folate, 40mg of calcium, and l mg of iron. The pink and red varieties are high in beta carotene, an antioxidant that the body converts to vitamin A.
Ingredients:
1 package (8 ounces) fat-free cream cheese
1/2 cup pink grapefruit juice
1/2 cup cold fat free milk
2 packages (3.4 ounces each) instant vanilla pudding mix
1 package (8 ounces) frozen fat-free Cool Whip whipped topping, thawed
Directions:
In a large mixing bowl, beat cream cheese until fluffy; gradually beat in juice and milk.
Add pudding mix. Beat on medium speed for two minutes. Fold in whipped topping. Store in refrigerator.
Recipe yield 4 cups.
