Sour Cream Cake
Ingredients:
5 tablespoons applesauce
2/3 cup sugar
1 teaspoon vanilla
1/4 teaspoon salt
1 cup fat free sour cream
Egg substitute for 1 egg, or 2 egg whites
3/4 teaspoon baking soda
3/4 teaspoon baking powder
1-1/2 cups flour
3/4 cup raisins or dried cranberries
Directions:
Combine first five ingredients and stir until smooth. Break up lumps in
baking powder and soda, then whisk into mixture. Stir in flour and raisins
until just combined.
Pour into a prepared loaf pan, and bake at 350-degrees for 40-45 minutes. Cool in the pan ten minutes before removing. Freezes well.
Recipe makes eight servings.
