Rhubarb Cake Recipe
Fat Free Cake Recipe
Ingredients:
1/2 cup applesauce
1/2 cup sugar
1/2 cup brown sugar
1 egg white
2 cups flour
1/2 teaspoon salt
1 teaspoon baking soda
1 teaspoon vanilla
1 cup milk -- fat free sour or buttermilk
1-1/2 cups rhubarb, chopped
Topping:
1/2 cup sugar
1 teaspoon cinnamon
Directions:
Cream together applesauce, sugars, and egg. Add flour, salt, vanilla, soda,
milk, rhubarb. Pour into 9 x 13-inch pan.
Top with mixture of sugar and cinnamon. bake at 325-degrees for 50 minutes.
Variations: Substitute blueberries or apples for the rhubarb.
Recipe makes 8 servings Rhubarb Cake.
