Pumpkin is SO good for you! Lots of vitamins and other vital nutrients in this delicious Pumpkin Ring cake.
3 cups no fat baking mix
1 cup warm water
1 cup sugar
1 cup packed brown sugar
1/4 cup applesauce
Egg substitute equiv. to 4 eggs
1 16-ounce can pumpkin
2-1/2 teaspoons pumpkin pie spice
1/4 cup skim milk
Heat oven to 350-degrees. Spray a bunt pan with non-stick cooking spray.
Beat all ingredients on low speed for 30 seconds, scraping bowl constantly.
Beat on medium speed three minutes scraping bowl occasionally.
Spread in pan, bake for 50 minutes or until toothpick inserted in middle comes out clean.
Cool ten minutes, remove from Pumpkin Ring from pan and cool completely.
Recipe makes 10 servings.
