This Enlightened Coca-Cola Cake comes out so moist and rich no one will guess you have lightened up for their waistline.
1 cup cola, natural if possible
1/2 cup water
1/2 cup canola oil
1/4 cup cocoa powder
1-1/2 cups miniature marshmallows
2 cups unbleached flour
1-1/2 cups sugar
1 teaspoon baking soda
2 egg whites
1/2 cup low fat buttermilk
1 tablespoon vanilla extract
Preheat oven to 325 degrees. Coat a 9 x 13-inch baking pan with nonstick spray and set aside.
Place cola, water, oil and cocoa powder in a saucepan and bring to a boil over medium heat. Remove from heat and add marshmallows. Stir until melted. Set aside.
Combine flour, sugar and baking soda in a large mixing bowl. In another bowl, beat egg and egg whites together, then stir in buttermilk and vanilla. Stir the liquid mixture into the dry mixture, then add the warm cocoa mixture. Pour batter into prepared baking pan. Bake for 45 minutes, or until toothpick inserted in center comes out clean.
For the icing, place cocoa powder, cola and butter in a saucepan. Bring to a boil over low heat. Remove from heat and stir in powdered sugar, nuts and vanilla; mix well. Spread icing over warm cake in baking pan. Cool on a wire rack.
