Cake mix makes this Festive Angel Cake dessert easy while crushed candy or sprinkles atop frosting makes it festive.
1 16-ounce package angel food cake mix
4 cups sifted powdered sugar
1/4 cup hot water
Funfetti sprinkles or crushed rock candy
Food coloring for frosting, if desired, color of choice
Lavender sprigs (optional)
Prepare angel food cake mix according to package directions. Cool as directed.
For icing, combine powdered sugar and hot water. If coloring frosting, add a few drops and stir into frosting until desired color is reached.
Spread icing over cake. Sprinkle funfetti sprinkles and/or crushed rock candy over top of cake. If desired, garnish bottom edge of cake with lavender sprigs.
In a small bowl, beat the margarine until fluffy. Add the confectioners' sugar, cocoa, water and vanilla; beat until smooth. Frost cupcakes.
Yield: 12 servings.

Variation I: Angel Food Ice Cream Cake
Sometimes things just aren't festive enough without ice cream! Another super simple cake to pull together, this one using a pre-made angel food cake.
1 angel food cake (8 inches)
1/2-gallon sugar-free vanilla ice cream slightly softened
2 quarts fresh strawberries
Sugar substitute to taste
Cut the cake in half. Tear one half into small pieces and set aside. Cut the other half into 12 to 14 thin slices; arrange in the bottom of a wax paper lined 13 x 9 x 2-inch baking pan, overlapping as needed.
Spread softened ice cream over cake, pressing down to smooth. Gently press the small cake pieces into the ice cream. Cover and freeze.
Just before serving, slice strawberries and sweeten to taste. Cut dessert into 12 to 14 squares and top with strawberries.

Enjoy cupcakes at your parties in place of cake? Make these super simple tender cupcakes and use the frosting ingredients and decorations above for festive angel food cupcakes! If desired, when in season you could place strawberries for a pretty, tasty low fat taste treat.
One (18.25 ounce) package angel food cake mix
Preheat oven to 375 degrees. Line a 12-cup muffin tin with paper bake cups. Prepare batter as directed on the box. Fill muffin cups 2/3 full. Bake for 15 to 20 minutes, or until done. Recipe makes one dozen cupcakes.
