Light Whipped Topping

Light whipped topping

There is no cream in this Light Whipped Topping but it will still make a light stiff topping if you can get one of the high-speed hand mixers such as the Bamix or Kitchen Mate that can beat air into the milk. Compare the amount of calories and fat in this to that of regular whipped cream. Be sure to use nonfat milk that is very well chilled.

Ingredients

1/2 cup non-fat milk
1/2 teaspoon rum extract
1/2 teaspoon apple juice concentrate
1 tablespoon superfine sugar

Directions

Whip the milk with a hand mixer until peaks form, about 20 to 30 seconds.

Add the flavorings and sugar, then whip for a few moments more. Serve immediately.

This recipe makes 1-1/2 cup.

NOTE: "Regular" whipped cream per 2-tablespoon servings contains 50 calories, 5.4 grams total fat, 3.3 grams saturated fat and 20 milligrams cholesterol.
