A No Egg No Shortening Fruitcake with molasses, raisins, maple extract and sweet spices of ginger, nutmeg, cinnamon and cloves.

No Egg No Shortening Fruitcake

Ingredients

2-1/2 cups sugar
1 cup molasses
2 cups buttermilk or sour milk (not too sour)
3 cups sugar
3 cups graham flour
5 teaspoons baking powder
1 pound seedless raisins
1 pound seeded raisins
1 teaspoon maple extract
1/2 teaspoon ginger
1/2 teaspoon nutmeg
1 teaspoon cinnamon
1 teaspoon cloves
Pinch of salt

Directions

Mix sugar and molasses and add maple extract. Add buttermilk (or sour milk).

Measure graham flour after chaff has been sifted out. Sift with white flour, baking powder and other dry ingredients.

Dredge raisins with flour and add.

Pour batter into 3 loaf pans and bake 45 to 60 minutes (depending upon which size loaf pan you use) at 350 degrees.

This recipe will make three loaves of fruitcake.
