Cheesy Chicken Pitas made with diced cooked chicken with apple and celery, spicy brown mustard and Cheddar on whole wheat pita rounds.
2-1/2 cups diced cooked chicken
1/2 cup diced apple
1/2 cup diced celery
1/4 cup mayonnaise
1 tablespoon Dijon or spicy brown mustard
4 whole wheat or white pita bread rounds
8 slices of Cheddar or Colby cheese
8 small leaf or romaine lettuce leaves
Combine chicken, apple, celery, mayonnaise and mustard in medium bowl; mix well.
Cut pita pickets in half; open pockets.
Line each pocket with two half slices of cheese and one lettuce leaf.
Fill pockets with chicken mixture.
For curried cheesy chicken pitas, add 3/4 teaspoon curry powder to mayonnaise mixture and substitute 2-tablespoons mango chutney for mustard.
Recipe makes 8 servings.
