Healthy Chicken Recipe

Ingredients:
2-1/2 cup diced cooked chicken
1/2 cup diced apple
1/2 cup diced celery
1/4 cup mayonnaise
1 tablespoon Dijon or spicy brown mustard
Four whole wheat or white pita bread rounds
Eight slices of cheddar or Colby cheese
Eight small leaf or romaine lettuce leaves

Directions:
Combine chicken, apple, celery, mayonnaise and mustard in medium bowl; mix well. Cut pita pickets in half; open pockets.

Line each pocket with two half slices of cheese and one lettuce leaf. Fill pockets with chicken mixture.

Variation: For curried cheesy chicken pitas, add 3/4 teaspoon curry powder to mayonnaise mixture and substitute 2-tablespoons mango chutney for mustard.
