Grilled Southwestern Chicken Sandwiches

Ingredients:
1/3 cup salsa or picante sauce
1 tablespoon olive oil
1 teaspoon bottled or fresh minced garlic
Four (4 ounces each) skinless, boneless chicken breast halves
Eight slices Monterey Jack or Mozzarella cheese
Four onion rolls split
1 cup packed shredded lettuce
Four slices large tomato

Directions:
Prepare charcoal grill or heat gas grill to medium-high. Combine salsa, oil and garlic; brush over both sides of chicken.

Grill over medium-high heat for five minutes per side or until chicken is completely cooked.

Place cheese over chicken and place rolls, cut-side down on grill during last one minute of grilling.

Serve chicken in rolls topped with lettuce and tomato. Serve additional salsa on the side if desired.
