2 bunches baby curly endive (about 8 ounces total)
1/2 pound smoked chicken breasts, shredded
2 small peaches
Juice of 1/2 lemon
16 fresh raspberries, for garnish
Raspberry vinaigrette (see below)
Divide endive and chicken among four salad plates. Slice peaches, drizzle with lemon juice and add to plates. Dot with fresh raspberries. Drizzle with raspberry vinaigrette and serve immediately.
Note: If time is tight, use smoked chicken from the deli.
Recipe makes 6 servings.
2 tablespoons raspberry vinegar
4 tablespoons olive oil
1/2 cup julienne fresh basil
1/8 teaspoon salt
Freshly ground pepper, to taste
In a 2-cup bowl, whisk together all ingredients.
