Nutty Chicken Salad Recipe
Healthy Chicken Recipe
Ingredients:
2 cups of green seedless grapes
3 cups diced cooked chicken breast
1 cup cashews
2/3 cup sesame seeds
1 tablespoons butter
1 cup sour cream
1/2 cup mayonnaise
1 tablespoon tarragon vinegar
1 tablespoon sugar
Salt and pepper to taste
Directions:
Combine grapes, chicken and nuts. In a small pan, saute sesame seeds in butter until browned, three to four minutes, stirring often. Set aside to cool.
In a bowl, combine sour cream, mayonnaise, vinegar, sugar, salt and pepper. Add cooled sesame seeds. Pour over chicken mixture and mix until combined. Serve immediately or refrigerate overnight.
Note: This salad is very rich. You may use non-fat and/or light fat mayonnaise and/or sour cream for a healthier but still very tasty salad.
Recipe makes 10 to 12 servings.
