Spicy Honey Barbecue Chicken is a combination of chicken thighs and breasts that creates a scrumptious and healthy spiced barbecue chicken dish.
1 package baby carrots (16 ounces)
6 medium red sweet potatoes, halved
1 small thinly sliced onion
2 pounds bone-in skinless, chicken breasts halves
1-1/2 pound bone-in skinless, chicken thighs
1 cup spicy barbecue sauce
1/4 cup honey
1 tablespoon flour
Combine carrots, potatoes and onion. Cover and microwave on high, five minutes; drain. Place large heavy-duty foil bag in 1-inch deep pan. Arrange chicken and vegetables in bag in even layer. Combine barbecue sauce, honey and flour. Spoon over chicken and vegetables. Seal bag.
Bake 40 minutes. Remove from oven and let stand five minutes. Open bag carefully away from your face to allow steam to escape. Arrange chicken and vegetables on a platter and serve.
Recipe makes 6 servings.
Bonus Recipe: Japanese Barbecued Chicken
1 medium-size fryer cut in quarters
1/2 teaspoon rosemary or poultry seasoning
1/3 cup soy sauce
1/4 cup tomato catsup
2 tablespoons white wine or lemon juice
2 tablespoons olive oil
Combine the marinade ingredients and marinate chicken in sauce one to two hours. Barbecue over charcoal grill or broil in oven.
