A fantastic Chocolate Bavarian Pie with the wonderful and pleasing flavors of Bavaria, Germany.
1/4 cup butter
36 reduced fat chocolate wafer cookies crushed to make about 1-3/4 cup crumbs
3/4 cup sugar (divided)
1 cup fat free milk
1/4 teaspoon salt
1 teaspoon vanilla extract
3 egg yolks
1 tablespoon (1 package) non-flavored gelatin
1/4 cup cold water
3/4 cup liquid egg substitute
2 1-ounce squares unsweetened chocolate
To make crust: Melt butter. Add wafer crumbs and 1/4 cup sugar and stir. Press mixture into bottom and up sides of 9-inch spring form pan.
To make filling: In saucepan, combine milk, remaining 1/2 cup sugar, salt, vanilla and egg yolks. Over low heat, stirring constantly, cook mixture to thin custard stage, about ten minutes. Remove from heat; cool about five minutes.
Soak gelatin in cold water. Mix gelatin and water and let stand until thickened. Add to filling mixture and mix well. Set mixture aside to cool.
Stiffly beat egg white product. Fold into whipped cream. Fold this mixture into cooled crust. Using smallest holes on a grater, grate chocolate over top to garnish. Chill until firm.
Recipe makes 6 to 8 servings.
