There is sauerkraut in this moist Chocolate Kraut Cake but you will not taste it - only the chocolate goodness will come through!
1/2 cup well drained sauerkraut
2/3 cup shortening
1-1/2 cup granulated sugar
1 teaspoon vanilla
2-1/4 cups all purpose flour
1 cup water
1 teaspoon each of baking powder and baking soda
1/4 teaspoon salt
1/2 cup cocoa powder (preferably organic)
Chop kraut very tiny, set aside. Cream shortening, sugar. Beat in eggs, one at a time. Beat well after each egg. Beat in vanilla.
Mix dry ingredients together and add to creamed mixture alternately wih the water. Begin and end with flour mixture. Stir in chopped kraut. Add chopped nuts (optional).
Bake in a sprayed 9 x 13-inch pan in a preheated 375 degree oven for 35 minutes or till a toothpick, inserted in middle, comes out clean.
Recipe makes 12 to 16 servings.
