Exotic Grapefruit Salsa

Cardamom gives this grapefruit salsa an exotic twist. And grapefruit gives salsa an altogether exciting kick.

Ingredients:
2 tablespoons lime juice
1 tablespoon olive oil
1 teaspoon minced jalapeno
1/2 red bell pepper, minced
2 tablespoons minced red onion
1 large grapefruit, peeled, membrane removed, sectioned, chopped
1/4 teaspoon ground cardamom
2 tablespoons chopped fresh cilantro leaves

Directions:
Toss ingredients all together.

Serve chilled as side dish to Fajitas, barbecued meat, seafood and nachos.

Yields 1-1/2 cups.
