Healthy Citrus Recipe

The term mesclun comes from the French word for a mix of tender young salad greens and is the formal name for mixed salad greens. You can buy this pre-mix in bags, or make your own blend, if desired. Leaves are varied, as a mesclun could include arugula, frisee, radicchio, dandelion greens, fresh herbs, and other salad greens. The taste depends on the greens included, but is usually "bitter" or peppery. Mesclun is great to mix with a milder lettuce or spinach for a tasty tossed salad!

Ingredients:
6 cups torn mixed salad greens
3 oranges or 2 grapefruit, peeled, sectioned, and seeded
1-1/2 cups peeled jicama cut into thin strips
1 medium red onion, sliced and separated into rings
1/3 cup Citrus Vinaigrette or other flavor vinaigrette (see recipes)

Directions:
In a large salad bowl combine torn mixed greens, orange or grapefruit sections, jicama, and onion rings. Drizzle with the vinaigrette; toss. Serve at once.
