Healthy Cookie Recipe
July, 2011: Consumer Digest came out with a "Top 10" list of the best high fiber cereals. The list consisted of Kirkland Signature Spiced Pecan (7g fiber per serving), Kashi GoLean (10g fiber per serving), Archer Farms (14g fiber per serving), Kellogg's Raisin Bran Extra, Post Shredded Wheat Spoon Size Wheat 'n Bran, Great Value Raisin Bran (Walmart), and Barbara's Bakery Ultimate Organic.
Ingredients:
2 cups semi-sweet (only) chocolate bits
1 cup high fiber cereal (raisin bran, cheerios, fiber one, etc.)
1/2 cup toasted soy beans, peanuts, toasted almonds, walnuts or cashews
1/4 cup dried cranberries
1/4 cup golden raisins
Directions:
Put chocolate morsels in microwave safe bowl.
Microwave one to three minutes, stirring once until melted.
Add remaining ingredients and mix well.
Drop by teaspoon on wax paper or aluminum foil.
Let cookies cool and sit (covered) overnight.
