Healthy Cookie Recipe

A person who practices a vegan diet is someone who does not eat or use animal products. The ingredients in this recipe contain no animal products whatsoever.

Ingredients:
2 cups whole wheat flour
3/4 cup raisins
1 teaspoon cinnamon
1/2 teaspoon baking soda
1 cup soymilk
1/3 cup oil
1/2 cup *sweet sorghum (or corn syrup)
1 teaspoon vanilla

Directions:
Preheat oven to 400 degrees. Mix the wet ingredients. In a separate bowl mix the dry ingredients. Mix it all together.

Drop cookie size tablespoonfuls onto oiled cookie sheet. Bake for approximately 20 minutes.

Note: Great with vegan jams, jellies spread on top as icing.

Variation: Try replacing 1-1/2 cups flour with 1-1/2 cups bran if you wish.

*About sorghum: Farmers on the hot, dry plains from Texas to South Dakota grow and use grain sorghum like Corn Belt farmers use corn. Worldwide, sorghum is a food grain for humans. Sweet Sorghum is a syrup made from the juice of Sorghum Cane. In years past it was used as an important sweetener. It came into prominence during the 1850's in the United States. It's actually a delicious syrup!
