Simple, Yummy, Vegan Cookies Recipe
Healthy Cookie Recipe
Ingredients:
2 cups whole wheat flour
3/4 cup raisins
1 tsp cinnamon
1/2 tsp baking soda
1 cup soymilk
1/3 cup oil
1/2 cup sorghum (or corn syrup)
1 teaspoon vanilla
Directions:
Preheat oven to 400 degrees. Mix the wet ingredients.
In a separate bowl mix the dry ingredients. Mix it all together.
Drop cookie size tablespoonfuls onto oiled cookie sheet. Bake for approximately 20 minutes.
Note: Great with vegan jams, jellies spread on top as icing.
Variation: Try replacing 1-1/2 cups flour with 1-1/2 cups bran if you wish.
