Simple, Yummy, Vegan Cookies

A person who practices a vegan diet is someone who does not eat or use animal products. The ingredients in this Simple, Yummy, Vegan Cookies recipe contain no animal products whatsoever.

Ingredients

2 cups whole wheat flour
3/4 cup raisins
1 teaspoon cinnamon
1/2 teaspoon baking soda
1 cup soy milk
1/2 teaspoon baking soda
1/3 cup oil
1/2 teaspoon baking soda
1/2 cup sweet sorghum syrup
1 teaspoon vanilla

Note: You can use 1/2 cup corn syrup in place of the sweet sorghum, if desired.

Directions

Preheat oven to 400 degrees. Mix the wet ingredients. In a separate bowl mix the dry ingredients. Mix it all together.

Drop cookie size tablespoonfuls onto oiled cookie sheet. Bake for approximately 20 minutes.

Note: Great with vegan jams or jelly spread on top as icing.

Variation: Try replacing 1-1/2 cup flour with 1-1/2 cup bran if you wish.
