THE Low-Fat Cookie is chewy wholesome and delicious! Don't let the long list of ingredients scare you!
1 cup unsweetened applesauce
2 egg whites
1/2 cup apple jelly, melted and cooled
3 cups old fashioned oats
1 cup whole wheat cereal flakes
3/4 cup packed brown sugar
1/3 cup whole wheat flour
1 teaspoon baking soda
1 teaspoon salt
1 teaspoon ground cinnamon
1/2 teaspoon ground allspice
1/2 teaspoon ground ginger
1/4 teaspoon ground cloves
1 cup raisins
1/2 cup chopped dates
1/2 cup chopped walnuts
2 tablespoons orange juice
2 tablespoons lemon juice
1 tablespoon vanilla extract
In large mixing bowl, combine the applesauce, egg whites and jelly. Combine dry ingredients; add to applesauce mixture. Stir in the remaining ingredients.
Drop by rounded tablespoonfuls two inches apart onto baking sheets coated with nonstick cooking spray. Flatten slightly.
Bake at 350 degrees for 12 minutes or until set. Remove to wire racks to cool.
Recipe makes 3 dozen.
